Glazed Lemon Loaf

This moist lemon cake is satisfying on its own, but is heavenly topped with a mix of blueberries, blackberries and strawberries. Made without butter, and using just a fraction of the oil found in similar recipes, the cake keeps beautifully because it is bathed in tangy lemon syrup. It travels well, too, making it ideal for carrying to picnics and potlucks.

Glazed Lemon Loaf recipe

Great texture and flavor. I used self rising flour and left out the baking soda and salt. For the glaze, I had to add more sugar than the recipe called for; it was just way to sour as written. I also cooked it for a longer time than the recipe instructed. I cooked it until it coated the spoon. Delicious, tangy and not too sweet.

This cake is moist and tastes great. Kids and husband loved it. I will definitely make it again. LoVe iT!

Quick & Easy

This recipe was super easy and quick!!!! I looked up the recipe last minute and had all ingredients on hand. Not only was it quick to whip together, but it was super moist and delicious. Not overly sweet or too lemony.
