Tasty but inconsistent

These were really tasty, but I had some problems with them. I had some batches come out chewy and some come out crispy. Must be something I was doing, but I don't know what. And initially I was taking them out of the oven too early because the instructions say to bake until golden. These turn golden very quickly and when they are done they aren't golden they are dark brown. Also, this made a ton more than 48 cookies for me.

Perfect for drop-in guests

These are truly the BEST ginger cookie ever - chewy, with that extra hit from the little pieces of candied ginger - delicious! One of my favorite things about these cookies is that once rolled into logs, they can be frozen and will keep for many months. Then when someone drops by, I can just pull out the log, cut off several slices while still frozen, bake them, and return the rest of the log to the freezer. Hot, fresh-baked, home-made cookies on demand.
