Fusilli with Zucchini & Goat Cheese

To quickly cut a zucchini into matchsticks, trim the ends, slice the zucchini lengthwise into 1/4-inch slices and then cut it crosswise into thirds. Cut each stack lengthwise into thin strips.

Easy to make and a nice change to typical pasta

We had extra goat cheese and were looking for a recipe to use it. This was perfect! It was simple to make, needing little prep and did not take long to cook. My husband and I both enjoyed the unique goat cheese sauce and zucchini in the pasta. Next time, I think we will add additional veggies rather than just zucchini, but will make it again for sure.
