I love fish tacos yet I rarely make them. I think I'm nervous about pulling it off. Well now I don't need to worry anymore. This recipe is fabulous!
At first I was skeptical to give it a try. There aren't many ingredients in this recipe. And the picture of the little girl prepping the food made me think this meal wouldn't have much punch. But I decided to try it because I was short on time.
I was pleasantly surprised and hope others (i.e. adults who like flavor) aren't fooled by the picture. All of us (husband, young kids and I) gobbled it up. It has lots of flavor and is easy (ex. 20 or so minutes) to make.
I made a couple of adjustments. One we sauteed the fish (tilapia) on the stovetop versus grilling it. Second we used whole fat plain yogurt instead of sour cream.
This is literally a fool-proof recipe that's healthy and delicious. Give it a try!
