Fattoush Salad with Ricotta Salata Cheese

Deep crimson ground sumac, the crushed dried berry of a bush widely found in the Middle East and the Mediterranean, is an essential ingredient in this dish. Its citrusy tang cannot be matched, so seek out the spice in Middle Eastern or specialty-food stores. Purslane, a sour, succulent Mediterranean herb, is also a classic addition, but if you cannot find it, use mache or more romaine.

Sumac is a fabulous addition

i first had this salad years ago at a restuarant in Boston - and for a long time, tried to duplicate the flavor in the dressing.. Light, tangy, unusual.. and oh so delicious.. Wasn't until i discovered Sumac berries that i realized what made this dressing so awesome..
I didn't whisk... i didn't make it in a bowl, i put all the ingredients for the dressing in a jar and shook it up... emulsified nicely...
This recipe is delicious (though i couldn't find purslane.. Romaine did nicely, it's fabulous - one i wll make over and over again
