Edamame is the Japanese word for soybean. Edamame makes a delicious and healthy snack: the pods are lightly boiled in water, then salted, and the seeds are squeezed directly from the pods.

Great salad any time of the year

I have made this salad several times. I found the recipe in one of WS small vegetarian cook books. It may take a little time to prep, but combining all of the ingredients yields a flavorful, colorful salad that will make more than one trip around the table.
