Surprisingly Simple

This recipe was absolutely stellar. Much more simple than I expected for a really stunning dish. We made is for Christmas dinner for four people and it was amazing.
Very impressive looking and tasting, and not complicated. It was my first time cooking duck breasts and I was really pleased with the way it turned out.
The cooking time was spot on (10 minutes on the skin side, 3 on the meat side) for a medium doneness. We served it with green beans, potato gratin, and a nice mixed salad and it was absolutely wonderful.

Easy preparation

Getting duck right is very difficult and this is a fairly easy recipe. The cooking time however, is not sufficient and the meat is quite raw. I added cooking time and sliced the meat thin and removed the skin. Once served warm with the sauce, it is truly delicious. And, Muscovy is a 'gamier' better choice,
