Not a good combination of flavors

The scallops are very tender. These are good instructions for cooking the scallops. Be sure to sear them very quickly. Leaving them too long ruins the tender meat from the sous vide. The beets are also good by themselves. They have a nice flavor throughout. However, this dish has too many odd textures and doesn't go well together. If served as shown, it might be OK. Altogether it was very mediocre and was overpowering in terms of odd textures.
Cons: Texture, Taste
