Curried Cauliflower & Chicken Stew

Good-quality canned coconut milk is available in Asian markets and many supermarkets. The solids in coconut milk separate and rise to the top, forming a thick creamlike layer, so shake the can well before using. Do not buy canned sweetened coconut cream, which is used for tropical drinks and some desserts.

if you're looking for an authentic curry, this isn't it. the fact that it doesn't call for ghee should have tipped me off but I was hoping this would be a slightly healthier yet still tasty version. The flavors are quite bland in spite of adding more curry and garlic than the recipe calls for.
Pros: Yield, Easy
Cons: Taste

This dish exceeded expectations... we love Indian food but weren't sure how this would turn out. Definitely worth trying - although be prepared, it does make A LOT!!

I don't get to cook indian food at home often since my husband isn't much of a fan but I got a chance when he was away for work. It's a really easy recipe to follow and it tastes like the great comfort food I remember from indian restaurants in NYC. I also really love cauliflower so this hit the spot for me!
