Cucumber Salad with Dill

This lovely salad is typical of the southern Mediterranean. It can be served as a side dish or an appetizer and is also delicious tossed with an herb vinaigrette in place of the yogurt dressing. A few slices of onion are an interesting addition, and a bed of greens makes an attractive presentation.

This is the perfect summertime side dish. The ingredients are simple and it only takes about 5 minutes to prepare. I make it about an hour ahead of time so it has a chance to chill in the refrigerator before serving. And I use greek yogurt since it has a rich and creamy texture. Refreshing and delicious!
