Creme Fraiche Cheesecakes with Freestone Peaches

Sliced and fanned over the top of these creamy cheesecakes, sweet, aromatic freestone peaches add superb flavor and texture. If fresh peaches or nectarines are available, you may substitute them for the canned peaches. When preparing the sauce, combine 2 fresh peach halves with 1/4 cup water and 1 Tbs. sugar along with the mint.

This is one of my favorite dessert recipes. The richness of the creme fraiche against the sweetness of the peaches is divine. Guests love this and you get to make it ahead! I do not make the sauce and cook the cheesecakes for 20+ minutes. Also, freestone peaches are now very difficult to find canned so I use the cling peaches which I don't think are as good.
