Easy Cranberry Upside-Down Cake

Lining the baking pan prevents the cranberries and glaze from sticking to the pan. Fold a piece of parchment paper larger than the pan into quarters, position the point of the folded paper in the center of the pan, and press the paper into the pan so that it creases where the bottom meets the sides. Cut the paper along the crease, unfold and press into the bottom of the pan.

I've made this cake multiple times. It's one of the best cakes ever. The tart cranberries, butter, and brown sugar take this over the top! If that isn't enough, the tender butter cake base is light and moist. If I want to wow my guests, THIS is the go to recipe. Truly the bomb!

i made it and it was so easy. i need not to use my stand mixer as handheld beater will do, even manually using a beater was okay. the cake tastes like my native "mamon" bread only dense. So good with coffee or tea. My husband is not into sweets but he loved this and actually wanted to save it and for me not to bring it at work. frozen cranberries will work too.

This cake is a big hit and looks especially festive at a holiday gathering. I've made it several times and it always looks exactly like the picture. Wonderful and simple to make.
