Corn and Chili Strata with Mexican Chorizo

Strata, a casserole of eggs, bread, cheese and other ingredients, is a busy cook's secret weapon: The dish can be assembled the night before, then baked the next morning to golden perfection. Use fresh Mexican-style chorizo, not smoked Spanish sausage links, for this Southwestern version, which is studded with mild green chilies and sweet corn.

What a fantastic recipe. A true gem. I use fresh chorizo made from my local butcher shop. I love that you can make this the night before. I made this for a baby shower luncheon, and it was a hit. This is perfect for any brunch, or for the day after a big holiday. I definitely have this in my recipe box.
Pros: Yield, Impressive, Will Make Again
