Coconut Rice Pudding with Gingered Asian Pears

Asian pears taste of a cross between apples and traditional pears, but with fresh hints of pine and a distinct grittiness. Chunks of the crisp fruit, accented by spicy fresh ginger, add a refreshing quality to this rice pudding that is rich and creamy with half-and-half and coconut milk.

OMG!!! Homerun with the hometeam!

This was quick and painless prep. So simple it was frightening. The flavors are amazing together. My home chef was impressed with this one. He may even let me back into the kitchen to make it again. We live in rice country-Charleston, SC. Loved it.

Fantstic Breakfast Recipe
October 16, 2010
Although this recipe was meant to create a delicious dessert, I decided to make this dish for breakfast - on Saturday - when no one is in a hurry.
I acted spontaneously! I did not have the half & half at home, so I decided to use more coconut milk instead. Asian pear, coconut and ginger are fantastic combination. Amazing flavor! The rice tastes good both, warm and chilled.
