Icing Flop

The cake is easy to make - although tastes rather bland on its own. The icing recipe makes WAY too much for the cake. The icing is the texture of melted marshmellow - very goooey and sticky. I think the cake would be much better with a different icing - something with a fluffier texture - and richer coconut flavour.
