Delicious and easy to make

The cake is easy to make. I add lemon grind to the flour that gives a refreshing flavor. I use a lemon curd filling as well. The quick/ easy buttermilk vanilla frosting is delicious and adds to the rich flavor of this cake. Every time I make it, our guests cannot have enough....

Icing Flop

The cake is easy to make - although tastes rather bland on its own. The icing recipe makes WAY too much for the cake. The icing is the texture of melted marshmellow - very goooey and sticky. I think the cake would be much better with a different icing - something with a fluffier texture - and richer coconut flavour.
