Chocolate Panna Cotta

Panna cotta has become a very popular dessert on our shores these last few years, and for good reason. It's a luscious, totally Italian custard, no eggs, just cream and flavorings. This is good served alone or with the slightest dusting of finely ground cocoa nibs or shaved chocolate. Panna cotta is usually vanilla-this one is for chocolate lovers.

I have made this for several gatherings and have gotten rave reviews each time. It is so simple to make and fun to 'dress it up' differently each time. Once I put a mint leaf with a raspberry on top, once just shaved chocolate sprinkled on and around it and another time we drizzled a raspberry glaze over the top. Of course we've eaten it just plain too! This is a winner!
