We love this salad! I love being able to make it ahead of time! It's easy, tasty and not expensive. It would be a great salad to take on a picnic because there is no mayo.

Easy and light weeknight dinner

I've made this a few times and it is definetly worth making. It's very light and fresh. Perfect for a weeknight meal or lunch. One tip: don't use rotisserie chicken. I did to try to save time, but it came out too mushy. Flavor was there but the texture was off.

I made this recipe the night before and served it with soft tortillas at a pot-luck luncheon the next day. The flavors were even more developed the next day and the chicken remained moist.
