This Italian dish illustrates the cooking technique known as panfrying. Boneless, skinless chicken breasts are pounded into tender cutlets for even cooking and quickly panfried. Then a flavorful sauce is prepared in the same pan.

Wow! What a great recipe! If you are into lemon (and we are) then this is the one you've been searching for. I doubled the recipe and my lemon only yielded 5T. Still, it was enough. I think 6T really would be pushing the envelope. I had whole wheat angel hair pasta prepared from a previous meal and together they are delicious. WARNING: Don't judge the sauce UNTIL you bring it up with the salt & pepper. It does make ALL the difference. Again, the perfect pairing is the pasta as it is the perfect laid-back complement to this standout sauce.

I made this tonight and I'm not one for spending a lot of time prepping for dinner. This didn't take too much preparation. It was quick to cook as well.
I would definitely use less lemon. Its very over-powering. VERY.

Love it, but I would reduce the amount of lemon

Made this for a date night, everything was wonderful except there was too much lemon in the sauce. I would reduce it by at least a half. Love the capers.
Served it with angel hair pasta
