Awesome use of sprouts

For our after-Thankgiving dinner, I made this recipe as a side, and I must thank the Voltaggio's as it was excellent! The sprouts stayed crisp, not mushy, and the sweetness of the apple/onion combo against the viniagrette was great. I also would recommend making less dressing; it just didn't need that much. Loved the smokiness of the bacon in the mix as well. My guests were asking for the recipe, so this will be going into the "make every year" category!..

Easy and delicious

Cooking brussels sprouts in bacon fat is a terrific idea. I wouldn't change a thing about the brussels sprouts. But I wasn't pleased with the vinaigrette. The recipe makes way too much vinaigrette. I recommend cutting it by a half or even two-thirds. I added more dijon mustard than called for and also added maple syrup (honey would work well too) to make the dressing more interesting.

I tried this last night and it was very good! The flavors together were wonderful. Plan to make it again for friends. Could not find sherry vinegar, but red wine vinegar worked very nicely.
