A foolproof recipe for a great ice cream cake

I made this ice cream cake for my daughter's 8th birthday. When I was making the shortbreads, I was surprised by how shallow the dough was in the pan, and I was worried that it would burn or stick. It didn't! I forgot to put the parchment down on the buttered dish, and despite that, the cookie popped right out without breaking after about 25 minutes of cooling. I also didn't have a stand mixer, and my hand mixer worked fine, and I didn't have super fine sugar, so I just pulsed a little regular sugar in the food processor. I am so excited to have found an ice cream cake recipe that is fairly simple and turns out well!

I made this for my daughter's Birthday. We loved the shortbread and thought it was a great compliment to the salted caramel ice cream.
