Too much work for the taste

I rate this recipe as average. I would not make again. I love butternut squash but not in a frittata. It was a lot of work to make this recipe.

Excellent use of butternut

This recipe was tedious with lots of julienning butternut squash. My hands were sore by the end.
The sweetness of the squash got surprisingly hidden by the eggs and sage. But it was a good recipe to keep at hand when you have way too many butternut squashes lying around.
