Butternut Squash Barley Risotto

This version of risotto replaces traditional Arborio rice with barley; high in soluble fiber, it helps process cholesterol in the body. Ever since I found out that I need to watch high glycemic foods, I have been looking for good barley recipes (as barley is a good low glycemic substitute for rice and pasta). This recipe, as simple as it is, really maximizes the flavor with the herbs, the richness of the cheese and the slightly sweet flavor of the squash. It's better than normal risottos. I'm totally making this again.
