Easy, and reliably good biscuit recipe
January 2, 2011
This is a good and easy recipe that produces hearty homemade biscuits. I have been repeating this recipe so many times! These are soft biscuits, and not necessarily the "flaky" layered type biscuits. However, I found it easy enough to create "layers" by folding the dough right before you cut it with a cutter. I typically roll out the dough a bit thinner into a rectangular shape, fold it so the edges meet in the center, and then fold it again so it kind of creates layers. Either way, these are very good biscuits that many people would love!

not so good

These biscuits were hard and heavy. I recommend using baking soda with the buttermilk to get a flaky inside and more rising action.

I have been making these biscuits for about 2 years. I get compliments every time. When I don't have the buttermilk, I use low fat milk and add a tablespoon of white vinegar (let it sit for a few minutes before adding it to the rest of the recipe). Often, I add dry chives and any mix of cheeses that I have around. I even added chopped, cooked bacon once, at my husband's request. Every way they are delicious!
