Brown Butter Mashed Potatoes

To produce fluffy mashed potatoes, boil the potatoes whole in their skins so they will absorb less water. Then use a potato ricer. Place the cooked potatoes in the perforated chamber, set the tool over a bowl and squeeze the handles. The potatoes emerge as fluffy, ricelike grains that blend readily with other ingredients, such as the brown butter used here.

A Winning Staple for the Thanksgiving Table

We have used this recipe for a number of years, and it is always a winner with our family. Unfortunately, there is never any left overs, because everyone likes the dish so much. Buttery, savory, creamy, woodsy - it is a perfect match to the rest of the Thanksgiving spread. I can't wait to make it again in a few weeks.
