Asparagus Soup with Crab Crostini

This simple, fresh-tasting asparagus soup is paired with hearty crab crostini, which are updated versions of open-faced crab melts. Choose slender stalks of asparagus for this dish. Sweeter and less fibrous than the thick ones, they will produce a lovely, silky soup when pureed.

Easy to whip up

This was amazing! I loved it and it was very simple to make (I'm a beginnier cook). I used imitation crab instead of real crab because one of the people eating the meal is preganant and it came out fine.
The asparagus soup was a little bland ~ I had to add more seasonings to spice it up, but it was good!

Fast and fresh!

This recipe came together quickly and is a great quick springtime meal. I used canned crab for the crostini and it was delish!
