Asparagus Fettuccine

To trim asparagus, you can cut off the dry, coarse-looking base or simply break off the tough end of each spear by bending it gently until it snaps. It will break at the point where the tender part ends and the tough part begins.

This is a family favorite that I prepare once a week. I found, though, that the zested lemons were accumulating in my refrigerator faster than I could use them, and decided to try using the lemon juice as well in the recipe. My mother always said that lemon juice brings out flavor. I squeezed half a lemon over the asparagus after it was cut into pieces and set aside. Then I added the juice of the other half to the mix after the pasta was cooked and tossed with the asparagus sauce. It really added a wonderful lemon flavor. I will probably try adding the juice of a whole lemon at each of those steps next time.

Great summer meal

I've made this dish several times for dinner parties, pot lucks, even just for myself. It's simple to make and everyone loves it. Great dish for the summertime, when you want something filling, but not heavy.

perfect for a last minute entertainment

I made this for my fiance's birthday last year. I was short on time and on a budget. This was a very cheap meal and everybody absolutely loved it. They all thought they ate a time consuming gourmet meal.
