Asian Chicken Salad

This colorful salad comes together in no time, particularly if you use a purchased rotisserie chicken. To poach the chicken yourself, bring a large saucepan of water to a boil over high heat. Add 1/2 tsp. salt and boneless, skinless chicken breasts. Reduce the heat until the water is barely simmering and cook until the chicken is opaque throughout, 8 to 10 minutes. Remove from the heat and let stand until the chicken is cool enough to handle, then shred the meat.

Perfect Asian Chicken Salad

I made this recipe exactly as written, using a grocery store rotisserie half of a turkey breast. The seasonings were perfect, and the overall taste very fresh and delicious. I served the turkey salad over lettuce; so perhaps making a double portion of the dressing (half to be served on the side) would have been a good idea. The sesame flavor is really extraordinary - maybe some toasted sesame seeds would also be a good addition.

Easy and delicious

This is a very easy recipe yet fresh with a beautiful colorful presentation. Buying the roasted ready free-range chicken breasts makes this a cinch to put together and feed many.
