Just like Mom used to make!

Smelling it while cooking brought back memories of standing in my Mom's kitchen when she made a similiar dish. As soon as I tasted the rice, it comfirmed to me that the smells coming from the oven was just like when i was a child and it tasted almost exactly like my Mom used to make. Can't wait for the next time.

I have never been able to get pollo con arroz right. I followed the recipe, except it took longer to brown the chicken and added in 1/4 cup fresh onions and sliced julienne peppers and 4 tablespoons of dry white wine during the saute of the long grain rice. The key to this recipe is having enough liquid and the right consistency during the baking (used a cast iron skillet with a cover) of the rice. I definite recommend the WS starter. Small pieces of tomatoes and good spices makes a good base for the rice/chicken. Perfecto!
