These ruby-hued steaks are hand-cut from wild yellowfin tuna that meet the highest standards of Maine's Browne Trading Company inspectors, who select each fish by looking at a thin core of its meat using a Japanese instrument called a sashibo. They ensure that each fish has the right color, fat content and texture-and that it is #1 sushi grade.
