Wonderful pan
May 13, 2013
I bought this pan to make dessert tarts and mini quiches. When I opened the box I was very pleased to see it seemed to be a very heavy plan of great quality.
I made mocha tarts with a chocolate covered coffee bean on top first. They turned out great. The tamper and the cutter made it very easy to use the pan.
Next I made mini quiches, that also turned out well.
I would recommend buying 2 of this pan because it would make the whole process faster. A great product!

Sweet Tarts!
May 6, 2013
Little pricey, yet LOVE this item. Really do pop out easily. I made Trisha Yearwood pecan tassies in them & worked perfect, even without chilling the dough, OR rolling/cutting it. Just made into 1" balls & pressed firmly into the "un-greased" tartlet cups. I did initially dip the little press in powdered sugar, then found it didn't even need it. Would order again & HIGHLY recommend. Much better than anticipated. May order a 2nd one. ULTRA CUTE

Impressive results!
April 8, 2013
Quite a few of the reviews state the tart shells are too shallow, when really this is an appetizer or dessert 'canvas' to hold a small amount of topping or filling. I agree with others that tamping firmly pushes the dough to a nice thiness and makes the well deeper. These were fun and easy to create an impressive treat!
Pros: Easy to Use

perfect little petite tarts
January 2, 2013
This pan works well and turns out very pretty, well shaped fluted tarts with a little practice. Made my own pastry recipe and found I needed to press the shaper quite firmly. The thinner the dough the better. Tarts released beautifully - didn't even need greasing or flouring. Filled with ~1 tsp poached pear with a cinnamon sugar reduction and piped marscapone custard on top. Very well received - lots of fun to work with too!

Really easy and fun to use
December 2, 2012
This mini tart pan is very easy to clean up and is very easy to use. I read all the reviews before purchasing and noted the comments on the cutter being too small. I found that the cutter did its job and cut the rounds just right. The trick I found that worked best for me was after pressing in the tamper straight down, I then pressed the tamper into each of the fluted edges. This pressed the dough up towards the top and made the tart bigger. I used a spray non stick and nudged the tarts out with a chop stick. Very nice.
Pros: Durable, Easy to Use, Quality, Easy to Clean

Star of the tea party!
July 17, 2012
I used this pan to make tartlets for a tea party fundraiser. The tartlets were just the right size to go with the other miniature food. The cutter did seem a little small, but I found that I needed to roll the dough a little thicker and then do a first press into the pan, following up in a couple of minutes with another firm press. I also used pie weights for part of the cooking time when I baked them without filling (just like I would when baking an emply pie crust). Yummy and fun!!

A little shallow
August 29, 2011
I love the idea of the pastry cutter and presser that come with this pan. That being said the cutter seems a little small for the size of the openings. Thus the resulting tartlets are a bit shallow.
Also be sure to dock the pastry beforre baking to keep the dough from puffing up.

Cons: Size

Docking is the process of making small vent holes in the dough with a fork, knife, or "docker" to allow steam to escape while baking. You can also weigh the dough down with pie weights, garbanzo beans, etc

Hello,
What is "docking"?
I have this set too and had planned on using it this past Thanksgiving to make mini pumpking pie tarts. However, my shells puffed up. I followed the recipe to the T.
Thank you.

Perfect for mini quiches or mini pies
May 31, 2011
I bought this pan two weeks ago . Tonight I made
the tartlets. It was so easy to use (I used Pillsbury refrigerated pie crust). All I had to do was unroll it. I cut out 12 tartlets with
one roll of dough . So easy to do. I made sundried tomato chicken sausage quiche
with mushrooms, parsley and parmesan
cheese and a little provolone. I didn't prebake just filled with some cheese, mushroom sausage mixture some more
cheese and then spooned on the egg mixture. Then baked for 10 minutes
and removed from oven. They come out easily if you use the tip of a thin knife to
just lift them. I then made another pan
full and didn't spray pan. I will bake them for another 10
minutes or so once I reach the party tomorrow. T. The trick might be to use
the refrigerated pie dough as it is the perfect width when you cut to fill the shell and doesn't shrink when baking. Thanks William Sonoma for
another wonderful bakeware item.

Great for making bite-size tartlets
May 26, 2011
I find the pan set very easy to use. I agree with other reviewers that the wells are shallow but I find myself enjoy using this set simply because it's easy and fast. I baked two batches from scratch within two hours. I didn't even wash the pan after the first batch. The amount of crust and filling makes the tartlets perfect for bite-size snacks. The picture on the package seems to suggest to use enough dough for each tartlet and press the presser firmly so the dough comes over the edge a little bit to make the tartlet deeper. I will try that next time.

Easy to use, but has a flaw
May 22, 2011
This tartlet baking set is very easy to use! Makes baking multiple tarts a lot easier than using individual molds. I do have one complaint, however. The cutter is too small, so when the dough is baked, it shrinks down to a very small size. I would recommend cutting out the dough and then rolling out each cut out a little to make it slightly larger.
Pros: Durable, Easy to Use, Easy to Clean
Cons: cutter is too small

Your tarts in the picture are lovely!
As for the tart cutter being too small, remember that when you roll out your dough you will be stretching the dough slightly and developing a bit of elasticity. Best to make the dough at least 8 hours ahead of time and allow it to rest and firm up in the refrigeraor. Then I remove the dough from the refirgerator, roll out a few sheets of dough (to the thickness I need for my tartlet baking set), wrap well, and then let those sheets of dough rest for at least an hour in the refrigerator. The dough will be much easier to cut because it will be firm and will shrink less because the dough will have had a chance to relax. When you remove the sheets from the refrigerator and cut out your circles with the cutter, allow them to sit for a few minutes so that they will be maleable enough to press into the tartlet pan. A little bit more work, I know, but your pastry will be flakier, too.
Happy baking!

This is the greatest pan!
April 25, 2011
I was skeptical when the back of the box said "Easy as 1-2-3" but it was fairly easy. I made two dozen of the mini quiche for an appetizer tonight and they turned out perfect. Yes the cavities are a little shallow but they are mini tartlets... this isn't supposed to be a full meal.
Love this pan... going back this week to buy another one so I can bake them all together!

Tartlet Pan
April 16, 2011
I was excited to see this pan as I make all my small tartlets in individual pans. I was immediately skeptical when the pan arrived and I saw the shallowness of the cavities. I used it with a pre-made pie crust. Each sheet providing exactly 12 rounds. To begin the cutter is 1/2" too small, so that when par baking, the crust sides shrink to less than 1/4". This definitely needs to be redesigned. Not for the serious cook or baker.
Pros: Durable, Easy to Use, Easy to Clean
Cons: cavities too small.

Tricks
Give it another try: I had the same problem, but the second time I got a little creative! You have to press the dough really thin into the pan so that the excess dough rises just over the sides. If you are not filling the tart with a baked filling use pie weights to avoid the shrinking effect. This worked like a charm for me! These were the hit of the dinner party that I went to. I also used the "Mixed Berry Tart" recipe off this website for the filling. Delicious and Easy!
