Our velvety milk-fed veal rib chops are hand selected and cut to order for us by Strassburger, a 150-year-old family-owned New York butcher that supplies some of the country's top steakhouses and restaurants. Strassburger sources the USDA Prime meat from animals raised in healthy environments by family farmers.
