With a dish as simple as osso buco - a classic Italian braise of veal shanks, wine, stock and vegetables - the veal itself needs to be of the highest quality. Our USDA Prime milk-fed veal shanks are exceptionally meaty around the bone, resulting in a dish with a rich flavor and meltingly tender texture. The veal is hand selected and cut to order for us by Strassburger, a 150-year-old family-owned New York butcher that supplies some of the country's top steakhouses and restaurants.
