Staub Grill Pan

The ridges on the bottom of this pan not only leave seared grill marks but elevate food, allowing fat to drip away. Staub's innovative enamel coating takes cooking with cast iron to the next level with improved performance, style and durability. Color selections feature glossy multi-coat enameling that ensures strength and heat resistance and creates a vibrantly colored "majolique" finish similar in appearance to fine ceramic for oven-to-table presentation. Matte Black selection features multi-coat enameling with low-gloss matte finish. Resistant to rust, chipping and cracking, the coating requires no additional seasoning like some other cast-iron pieces. The specially formulated black matte interior enamel of each piece contains traces of quartz, giving it additional heat resistance and a rougher surface resulting in better browning. The smooth enameled base is compatible with all cooktops including induction. A spout on the pan's side eliminates spills when pouring liquids. Made in France.

Love/Hate This Grill

I want to love this pan as it is fantastic for grilling! My grilled chicken has never been juicier, cooks as quickly or has those wonderful grill marks as is consistently dilivered by this pan. On the other side, I hate how hard this grill is to clean. I oil it before use, don't cook on higher than medium, and have tried all the suggestions from other reviewers for cleaning, all with the same outcome--burned on marinade, burned on fat, burned on oil that won't come off without spending a very long time scrubbing. I have a Staub Cocotte that I use several times a week and it cleans easily! I tried the boiling water as suggested by another reviewer, tried soaking for 30 minutes in hot water and dish soap and finally I used a knife and the Bartender"s Friend that I have for my All Clad cookware! I gave this grill 4 stars for cooking abilities, but would give it one star for cleaning, and thus cannot recommend this for any friend!

Great grill pan

Don't believe the bad reviews about Staub or LC grill pans. Are these difficult to clean? Potentially. If you avoid using sticky or sugary glazes/marinades your cleaning will be easier by 50%. Instead, glaze your meat only on the side that was down after you turned it. Than when you pull the meat, glaze the naked side while you are resting it. This tip came directly from Chef Bobby Flay. Just don't let the sticky glaze cook on the ridges.
While the meat is resting, when the pan has cooled down a little, slowly pour hot water so the ridges are submerged. This will help loosen the stuck on bits. Make sure the pan is slightly cooled or when the water hits, it will splatter all over.
I bought the Graphite colored, 12" grill pan and love it. It's heavy but cast iron is heavy. I don't know about problems with the "supposed" cracked pans mentioned on Internet reviews. I've never had a problem is all I can say. If you've been considering buying one, go for it!

Cracked in half!

A friend bought this for me as a housewarming gift. The first one cracked in half on the first use, the second just a couple of months later. Not only that, but it sticks like glue to everything, and I've followed the manufacturers directions, I've tried seasoning it every which way and still sticks to everything. Not what I expect from a product of this price and from Staub!

Grill Pan Basics

I suggest ordering the pan/press combo up front. You're going to need the press if you want to cook steaks/chops correctly. The secret to pan grilling: You need heat to sear adequately, but when using a grill pan, too much heat turns into a smoky kitchen.
Instead, we swap a weighted press for lower heat. Your grill pan should never be put on a High flame. Put the pan on the burner at medium heat for 2 minutes, throw on the steaks, drop on the press. You do not want the pan to smoke.
The best recipe for a 10oz. New York strip is: Pan on medium heat for 2 minutes. Season steak. Put steaks on pan, add press. Count to 150. Turn steaks. Count to 120. Turn steaks over, 90 degrees. Count to 60. Turn steaks over, 90 degrees. Count to 60. This produces a medium-rare steak.
As for those reviews that claim their Staub cracked, I'm amazed. I have a number of Staub pieces and I abuse them something terrible: right from fridge into pre-heated oven, etc. And, I have never even had the enamel chip.

I have had my 12" pan for about six months and use it once a week on average. Does a great job grilling lamb chops, steaks or pork chops. Heats up well and makes nice grill marks. I love this pan and use it any time I want something grilled but don't want to bother with the outdoor gas grill. This is fast and easy with excellent results.

Beautiful Product

I have not used this product yet. I ordered the 12 inch and should have ordered the 10 inch. I gave it to my daughter and she loves it. She prepared delicious and beautiful looking steaks and chicken breasts with it so far. I plan to purchase the 10 inch next week from a Williams-Sonoma store. The color (blue) is so beautiful. Unfortunately it is very heavy but that is to be expected. I own other Staub cookware and love it.

Broke on the first use

Extremely dissapointed. In my convector kitchen at 3/4 power, the pan broke on the first five minutes of use,Unfortunatelly I live abroad and could not clain the guarantee.

Great item but could be better

I had lusted after this grill pan for almost a year before I bought it--love the looks of it (beautiful exterior blue) and it is very easy to clean. While it is undoubtedly great for larger cuts of meat, like ribs and such, it is a disappointment for steaks. By the time the meat is seared on one side and ready to flip, the temperature is up and it is time to remove for resting, so you never get those deep grilled marks or the color that are so coveted. All in all, I will stick with my former aluminum grill pan and oven combo for steaks and save the Staub for other grilling. A disappointment, but one I can live with.

In April I purchased several Staub pieces before moving to Paris for my husbands job. I wanted French cookware in France. About the third time I used the grill pan it cracked during use. Porcelain and cast iron were both cracked. Have had no problems with other pieces.

Cracked Staub Grill Pan?!?
I have now read 2 reviews of this pan cracking/breaking in half! What's up with that? I would be curious to know what type of burner (electric - ceramic glass/metal disc/coil vs gas) and what heat setting was used. And, more importantly, what explanation was given (if any) by either Williams-Sonoma or Staub. I think I read on another site that the Le Creuset grill pan was not recommended for ceramic cartridges (Jenn Air type, I presume, which is what I use). Wondering if this is also true for the Staub grill pan. I'm guessing the reason is that one would have to use very high heat to get effective "searing" and that temperature may create "problems" for the ceramic/glass cartridge. I would appreciate some feedback on the "cracking" issue. Thanks.

This pan really delivers

I got this pan for my birthday, and love it! We live in the Southeast and summer is really HOT, too hot to grill out sometimes. This grill pan has been a good alternative to the outdoor grill. Cleanup was a little hard the first few times I used it, but once it got seasoned it was a lot easier. I use mine so often it just stays on my stove along with my favorite cast iron skillet. It was well worth the investment.

From grill cheese to Filet Mignon! This is by far the best grill pan I have ever used. Worth every penny.
Cook on meduium low like any cast iron element and you will do just fine.

I had been looking for a cast iron grill pan for sometime, but had a few requirements...ease in cleaning, color/attractiveness, quality, good reviews from others. I have used this grill pan several times in the couple of weeks since I received it in the mail and love it a little more each time I use it. It is a beautiful piece of cookware, cooks steaks perfectly and is so easy to clean up. Every household should have one of these!

Pan cracked on first use

Don't know what to say. It cracked the very first time we used it. Right through the middle of the pan. We were browning some lamb chops and "BANG!". Cracked clear through the bottom of the pan. It seems that others may have had similar problems so I'm concerned about getting another. I'm planning on doing a return and get something else from W-S.

The Staub grill pan works superbly for steaks and chops developing a flavor and look no ordinary pan can match. However fish tends to stick to the grill surface and while texture and flavor is fine, the appearance of the fish when plated could be better.

The best grilled chicken I've ever made!

Several people wrote that the coating chipped off. I just used my pan for the first time. I can see why they thought the coating had flaked off, but it didn't. Due to the prolonged high temperature I was able to use, some grease spots burned on to the pan. I was able to remove them by gently rubbing them with a metal scrubbing pad. These were grease spots burned on to the pan and came off relatively easy. The finish on my pan was in perfect shape once the black spots were removed. It took some effort, but the result was well worth it!

I was very excited about this purchase based on it's good reviews and price comparison to Le Creuset. However, after two uses, I'm disappointed. Food sticks terribly and it's very difficult to clean.

Have used this grill pan many times with excellent results. The pan is able to sustain temperatures hot enough for deep grill marks on beef steaks without the beef sticking to the pan. Same good fortune with Salmon steaks. Vegetables are successfully grilled with minimal fuss and clean up. Results rival outdoor gas grill cooking.
