Shun Ken Onion 5.5" Boning Knife

This boning knife features a unique bolster and contoured handle by innovative cutlery designer Ken Onion. Crafted by Japan's premier knife maker, it provides a firm, comfortable grip that's essential for the often-slippery precision work of removing delicate flesh from bone and tendon. VG-10 "super steel" blade is clad on each side with 16 microthin layers of high-carbon steel, creating a variegated look reminiscent of a Damascus-style blade. Specially shaped handle increases control while decreasing fatigue. Handle is made from resin-infused PakkaWood for lasting moisture resistance. Handcrafted by Kershaw, premier cutlery makers for more than 90 years.

The Best knives for persons with Arthritis

This is my first "Shun - Ken Onion" and fell in love with the grip, size, angle, etc... of the handle. I had planned on purchasing the "Shun - Classic", but it was not available in this model. I did purchase other "Shun - Classic" models, but after using the "Shun - Ken Onion", I decided to exchange them for more "Shun - Ken Onion" knives, etc... They are incredible for those of us that have "Arthritis", the "Ken Onion" series requires little hand strength to hold and use.
Pros: Durable, Easy to Use, Quality, Balance, Easy to Clean, Easy to Store, Size, Strength, Versatile, Sharpness, Shape, Weight, arthritis friendly

I would rather not admit that this knife is worth what they charge for it(I used a gift certificate to cover most of it.), but it is. I have used it for prep work as well as some intricate trimming and boning of several pieces of beef and lamb. It has out performed any expectations I could have imagined. If you are reading the reviews you can stop. Just buy it. You'll love it.

this is by far and away the best knife I have ever used. It is light well balanced and sharp. It also seem to stay very shrap. I have even cut through cabbage relatively easy with this small knife. I find doing small vegetable a joy with this knife. If you need a set of knives I would recommend this set with this in based on this one knife or just this one alone.
