Sharp as a razor, Slippery as a fish

This knife is absolutely beautiful. It is balanced perfectly, and has an edge out of the box that could break 1000 chickens down without sharpening.
The Handle. While beautifully crafted, and wonderful to look at, is super dangerous, and Painfully Non-functional. The point of a handle is to have a functional portion of your knife that you can grasp on to with your palm and fingers. As an example, when boning a chicken, from whole bird to 12 pieces, I find my hand and handle getting slick. The last thing you want is a a razor sharp knife with a handle you can't keep a hold on.
Beautiful craftsmanship but an expensive disappointment for me. I would have rated it lower then 3 stars for this possibly fatal error, but it is a beautifully crafted tool that still earns respect.
I am a professional, but this knife does not enter the kitchen with me anymore.

Excellent design and razor sharp

This is truly the only boning knife you will ever need. Shun Kaji are heirloom quality. This is an exceptional knife. The core of this knife is a SG-2 powdered steel clad in a true Damascus layer of forged nickel and stainless steel. Extreme. Durable. This knife will bone a duck, chicken or fish without any effort whatsoever. SHARP!

The Best Boning Knife

This is not my only boning knife, but it will be from now on the only one I will use. The blade length, handle and weighting of the knife make it a dream to use. As with all Shun Kaji knives, it is razor sharp and makes boning jobs incredibly easy. It is a great addition to my kitchen.
