Shun Edo Slicer

Shun Edo's reputation for superior power and control is reflected in the extraordinary appearance of their cutlery. The VG-10 steel blade's eye-catching hammered pattern reduces drag and helps food release easily, and the handle's tear-drop shape and broad bolster facilitate a variety of cutting techniques. Designed to create thin, uniform slices of everything from roast meats to smoke salmon, this precision knife is equally proficient at cutting larger fruits and vegetables. Wide bolsters and ergonomic grips reduce tension and fatigue while providing added leverage. Incredibly dense VG-10 "Super Steel" blade is tempered for exceptional hardness and edge retention. The hammered pattern ("tsuchime" in Japanese) helps the blade pass easily through food without sticking. Handle is made from resin-infused PakkaWood for lasting moisture resistance. Shun's knife-making technique draws upon the traditions of Japanese sword-making while employing state-of-the-art technology. This NSF-certified knife meets the high-level hygiene standards of commercial kitchens. Handcrafted in Japan.

Comparison knives are nowhere near comparable
November 21, 2010
I used to love my Henckels knife set, but after trying the Shun Edo Slicer and comparing it side by side with the similar sized Henckels, it was clearly the winner. In fact, we are now going to replace our entire Henckels set with Shun because we love them so much. If you want a high quality knife that you will actually look forward to using, start with the Shun - it will be a money saver in the long run!

Beautiful knife
October 5, 2010
I recently recieved this knife for a wedding gift and I have to say that it is a work of art. Aside from the fact that it is perfectly balanced and the sharpest knife I've ever used it is also the most beautiful knife I have ever seen. I enjoy slicing away at things now and look for a reason to cook something just so I can pull this knife out.

Awesome Knife
September 16, 2010
The knife is weighted very nicely, which helps it cut vegetables with ease and it is a beautiful looking knife. It easily cuts right down threw the skin on Green Peppers, red peppers and any vegetable with skin. It really makes chopping vegetables a lot easier and less of a chore. The food does still stick to the knife as I chop, but a great knife and I do enjoy using this knife.
