Shun Edo Chef's Knife

Shun Edo's reputation for superior power and control is reflected in the extraordinary appearance of their cutlery. The VG-10 steel blade's eye-catching hammered pattern reduces drag and helps food release easily, and the handle's tear-drop shape and broad bolster facilitate a variety of cutting techniques. Incredibly dense VG-10 "Super Steel" blade is tempered for exceptional hardness and edge retention. I treated myself to a 9-piece Wusthof knife set a few years back, and I love it to this day. Got a gift cert from the family for Father's Day and checked out every knife in the store and picked this Shun Edo knife - the feel and quality were superior to every other knife in my opinion. The prior reviewer indicated it worked for a smaller female hand. I have a larger than average male hand and it fits like a glove. It is incredibly sharp and nimble for all uses - although I feel a bit guilty using it in the prescence of my Wusthofs!!

I have wanted a Shun knife for a long time, but wanted t test them in the store first. Well I handled a few of them and the edo one was far superior than even the other lines of Shun...including the more expensive one.
What makes it unique is the handle. Its oval and makes gripping the knife effortless. PERFECT for a female cook or someone who has smaller hands. It also has finger "dimples" at the base that allow even a beginner cook grip the knife properly. I consider myself a very experienced cook and find this very helpful for me too as I tend to get lazy about proper knife techniques.
Although it is still new I love this knife. Time will tell if it holds up well.
