This classic blade shape provides optimal control and maneuverability, ensuring maximum yield. Wide bolsters and ergonomic grips reduce tension and fatigue while providing added leverage. Incredibly dense VG-10 "Super Steel" blade is tempered for exceptional hardness and edge retention. The hammered pattern ("tsuchime" in Japanese) helps the blade pass easily through food without sticking. Handle is made from resin-infused PakkaWood for lasting moisture resistance. Shun's knife-making technique draws upon the traditions of Japanese sword-making while employing state-of-the-art technology. Delightly efficient for boning

I love this particular "species" of Shun knives for the weight balance and the feel of the handle.
I just received this boning knife as a present and have now cut up several chickens and a duck. It's larger than most boning knives and that seems to be a plus in sliding through between bone and flesh. My deboned breast meat came out perfectly. There's no comparision with trying to use a different knife (e.g. paring) for the job.
