Shun Classic 6" Meat Cleaver

Tackle the work of breaking down larger cuts of meat and whole poultry with this heavy-duty cleaver, which cuts cleanly through flesh and bones. Produced by Japan's leading blade manufacturer, it has a wide, flat blade that can also be used to tenderize meat. VG-10 "super steel" blade is clad on each side with 16 microthin layers of high-carbon steel, creating a variegated look reminiscent of a Damascus-style blade. Well I purchased this Shun meat cleaver so that my set of knifes would all be Shun. I haven't used it until today when I made standing Rib roast. The meat was very tender and I cut it with my Shun Slicing knife with no problem but I didn't want to take on chance with it tackling the bone so I used my meat cleaver to chop/cut through the bones which it did very easily. Problem is when I went to wash it only moments later I noticed a big chip/ bend in the blade. Thank God I didn't use this cleaver on a really tuff job the results might have been mich worse! I was a meat cutter for a few years in my youth and I can tell you the cleavers we used did not chip like this expensive cleaver did on it's Maiden Voyage! Those cleavers where worked day in and day out without issues. I will be returning this item ASAP and purchasing a professional meat cleaver. Shun makes great knifes but I think this cleaver is more for Veggies. Maybe they best go back to the drawing board on a real meat cleaver.

Fantastic for cutting whole chickens

I bought four whole chickens and it took me less than a half hour to cut them up into sections to bag for the freezer.
It was almost scary how easily the knife cut through the joints separating leg and thighs- barely any pressure was needed. Amazing! I was sure my hands would be sore after all the work ahead of me (and with my old knives they would have been) but when I was finished I'd had so much fun I was almost disappointed!
Definitely hands down the most fantastic knife I have ever used, and should be a staple in everyone's kitchen. Only con is storing, as it is to heavy for magnetic strip, but its so pretty I just keep it on the counter.
Pros: Easy to Use, Balance, Easy to Clean, Size, Strength, Sharpness, Shape, Weight
Cons: Difficult to Store
