Shun Classic 4" Perfect Paring Knife

Produced by Japan's leading blade manufacturer, this paring knife is indispensable for trimming and peeling fruits and vegetables. The blade curves inward for easy peeling and then outward for slicing and coring. VG-MAX "super steel" blade is clad on each side with 16 microthin layers of high-carbon steel, creating a variegated look reminiscent of a Damascus-style blade. This is one of my favorite knives for everyday tasks. I love the shape and it cuts like butter. Have given it to both daughters. Love it!

Disappointing functionality

Beautifully constructed, as you would expect from Shun. However, the design results in poor performance for many paring tasks. The convex portion of the blade terminates at the heel in a very sharp point that is perfectly aligned to puncture, should you try to peel fruit by drawing the knife toward your thumb. The 1.325" width of the blade limits its use for many fine tasks. I would like to see a similar knife with less concavity and about one half the blade width of this one.
