Round Banneton Bread Basket

Generations of European bakers have used baskets like this one-called a banneton in French, and a Brotform in German-to proof bread dough for round loaves. The dough rises evenly into a uniform shape, while the rattan coils draw out moisture, promoting crispy crust. Spiral indentations left by the coils bake into the bread, so loves come out with a classic artisanal finish. For proofing up to a 2-lb. loaf. Simply flour the banneton and add kneaded dough for the final rise. Great with handmade and machine-made dough. Doubles as a serving basket.

Excellent Bread Making Tool

The banneton is a special tool used for making bread. This banneton is very well made from what appears to be birch. The coil construction means that the end product bread will have the "beehive" look one finds in high end artisinal bread. Using the banneton really helped my bread baking. I made a wild yeast bread using my new banneton. The dough rose well. After baking it had a nice crunchy crust. I attribute this to using a cloche but also to the banneton which draws some of the moisture from the outer layer of the dough. Also the banneton is attractive enough to use to serve the bread. But be warned, this is equipment for the serious repeat bread baker.
