Awesome for Turkey

I use my Romertopf baker for my turkey at Thanksgiving and Christmas. It makes the best turkey in the world! I swear by this thing. Soak it for 15 minutes in cold water. Put your turkey in it (I put black truffle shavings under the skin, stuff it with mirepoix, and season with salt and pepper and white truffle oil). Put it in a cold oven, and turn the heat to 450. After a 1/2 hour I turn it down to 425. It cooks in about three hours. I use a leave in digital thermometer. Juicy bird! Drain the liquid from the pot, omit the fat, and make gravy.
