Very good zucchini frittata

I scanned through the frittatas looking for one that I had all the ingredients for. It has a nice flavor. I used 1/2 tsp fresh tarragon and it was just right. The thinness of the zucchini slices is important here. This recipe, unlike most of the the others here, does not use cream and is therefore more healthy. I will make this again.

Perfect for any meal

Frittatas are always an amazing substitution for omelet or quiches. Can hold more vegetables than an omelet and no crust to prepare as you would for quiche. The zucchini tastes delicious in this anytime dish.
