Yellow Pepper Soup

This soup is best during the summer months, when bell peppers are at their peak of flavor. For a completely different taste, make it with roasted and peeled bell peppers, reducing the cooking time to 15 to 20 minutes. Red peppers also make a beautiful soup.

A good basic soup

A simple soup to prepare. Good flavor although not very complex in taste. I had red peppers, so that's what I used. On the negative side; bits of pepper skin did not puree well & resulted in a texture that was distracting. I typically make chunky soups & don't puree smooth many like I attempted with this one, so it could be that a more quality blender would take care of this issue; a new one is on my shopping list! I will experiment a bit with this one, starting with roasting & removing the skins.
