Delicious Variation

I made this stew with several variations based on what I had on hand. I followed the recipe but used two rutabagas and one parsnip in place of the three parsnips. I substituted red wine for the sherry and rosemary for the dried tarragon. I used homemade chicken stock. Make sure you salt to taste as you go, as this stew is all vegetables. I omitted the watercress, topped the stew with lemon zest and parmesan cheese and served it with rosemary ciabatta rolls with butter. It was delicious!! Goes well with a petit sirah.
Pros: Yield, Good Value, Easy, Healthy, Adaptable, Will Make Again, rich and hearty but not heavy.
