Wild Rice and Wild Mushroom Soup

Wild rice isnt really a rice at all but a semiaquatic grass native to North America. In California and Minnesota, wild rice grows throughout the summer and is harvested in September and October. Its earthy flavor makes it a perfect grain for serving during the autumn months.

A Christmas tradition

The first time I made this - several years ago - I had mushrooms flown in from Seattle. It was outrageously expensive and outrageously delicious. I've served it for Christmas dinner every year since, made from plain old grocery store mushrooms. It is still outrageously delicious.
It keeps well in the fridge for a few days, and if by any chance you have enough to freeze, it is fine reheated, too.
If you like the earthy taste of mushrooms, this will be heaven to your palate. I always serve it with beef for the holiday meal, but it's awesome as the main course for a hearty lunch or supper, with a big hunk of chewy bread.
Pros: Quick, Easy, Will Make Again, delicious, reheats well, doesn't have to be expensive

Easy and so flavorful

Somehow I manage to make it way to thick each time so I have to add more broth but it still tastes amazing. I've made it a few times and it's been a great hit.

This is a relatively easy soup to make, yet the complexity of flavors and unique textures make it seem like it would involve a lot more work. I have made this recipe many times for family and friends and occasionally just for myself. It is the most requested item in my repertoire of home made treats!
