A warm bowl of this soup is a welcome treat in the cold depths of winter. The fresh wild mushrooms preferred for this recipe are porcini, hedgehogs, chanterelles or shiitakes; if unavailable, substitute fresh button mushrooms.

Easy and Delicious

Soup was excellent and easy to prepare. I used the button mushrooms and dried shitake in the broth and added cremini mushrooms to the soup after blending. I sauteed the creminis with butter, salt, pepper and cayenne pepper. The blue cheese on the baguette was the perfect compliment and found that a little blue cheese sprinkled on top of the soup was a great flavor accompaniment.
