I want to put a blue cheese toast on everything!

The soup is rich and flavorful. I've had good results when modifying the mushrooms based on what was available at the time. (And once I was too lazy to strain the soup & it turned out just fine.)
The blue cheese toasts, however, make the soup extraordinary. They're easy to make, impressive, and tasty. More things should come topped with a blue cheese toast!
