Dried porcini mushrooms add depth of flavor to this risotto. Be sure to use Arborio rice, a high-starch rice that becomes exceptionally creamy as the dish slowly cooks.

I started making this recipe about 5 years ago and my fiance still loves it, as do my very picky friends. I had never made risotto before trying this recipe, and it was fairly easy to make. The hardest part was realizing that you have to stir it constantly otherwise it burns/sticks.
I recommend chopping/soaking everything before you start cooking, rather than trying to do it during cooking, it will make your life easier!
Great as a main dish for a few or as a side for a large group
