Wild Mushroom-Goat Cheese PhylloTriangles

These phyllo triangles are great hors d'oeuvres for entertaining because they can be prepared in advance and frozen for up to a month. Before freezing, place them in an airtight container, separating each layer with a sheet of waxed paper or parchment paper.

Had an abundant season for morel mushrooms. Replaced the Shiitake mushrooms with morel mushrooms and WOW, so rich, so flavorful, I can't wait until next season. I'm going to try it again with shiitake's. Also, instead of brushing the phyllo sheets with the butter, I used a butter flavor spray between layers. This worked well and eliminated tearing the phyllo sheets.
Pros: Yield, Appearance, Adaptable, Impressive, Will Make Again

The fillings on this recipe is to die for. However save yourself ALOT of trouble and don't use the phyllo pastry dough, I don't think its worth the time spent. Next time I would try putting the filling in pre-made pizza dough crust or rolls.
But wonderful recipe. Made a ton, and great to keep in freezer and put in for company.
