Whipped Sweet Potatoes

People are sometimes confused by sweet potatoes and yams, which look very much alike. Both have fairly thin skin, with flesh ranging from pale yellow to bright orange. Typically, sweet potatoes have less moisture than yams. Feel free to use whichever you prefer in this recipe.

Sweet Potatoes with Fresh Ginger!

I married into a family that thought they didn't like sweet potatoes. I've been making this now for years and my family loves it. It's amazing the way the fresh ginger enhances the flavor of the sweet potatoes.
I omit the green onions and, if using dried ginger increase it to two teaspoons. When the potatoes are finished, I put them in a casserole dish, dot them with butter, cover them loosely with foil and place them in the oven to warm up. Wouldn't be Autumn without them!
Pros: Quick, Easy, Adaptable, yummy!
